Skyr bowl with wild blueberry powder – 24 g protein, no added sugar
Skyr is one of the few foods that have evolved from a trend into a staple. Sales in Germany have been growing by double digits for years – for a simple reason: high protein, low fat, creamy consistency.
However, plain Skyr tastes quite sour. And that is exactly where the problem starts for most people: the sugar added to it negates the benefits.
Why wild blueberries are the right choice
Ckrushed wild blueberry powder provides 500 mg of anthocyanins per 100 g – the deep blue plant pigments for which the wild berry is known. Wild blueberries are smaller and blue all the way through, including the flesh, and are significantly richer in anthocyanins than large cultivated blueberries.
The vitamin C it contains contributes to the normal functioning of the nervous system and psychological health.
But something else is practically decisive: the acidity of the Skyr and the mild sweetness of the blueberry balance each other out. You don't need honey.
Ingredients for 1 bowl
- 200 g plain Skyr
- 1 tsp (3 g) Ckrushed wild blueberry powder
- 1–2 tbsp water or milk (to loosen)
- 2 tbsp oats or granola
- 1 tbsp sunflower or pumpkin seeds
- optional: 1 tsp apple powder for mild sweetness
Preparation – 3 minutes
- Mix the powder first. Stir the blueberry powder with 1–2 tbsp of water in a small bowl to create a smooth paste. This is the trick to avoid lumps – powder thrown directly into thick Skyr does not disperse well.
- Fold in. Stir the paste into the Skyr until the color is a uniform purple.
- Top it. Add oats and seeds on top. Done.
Nutritional values per bowl (approx.)
- Protein: around 24 g
- Fiber: around 3 g
- No added sugar
For comparison: a standard cup of fruit yogurt often contains 15–20 g of sugar and less than 10 g of protein.
The lump-free trick in detail
Freeze-dried fruit powder is very fine and binds liquid quickly. It therefore easily clumps in thick Skyr or quark. The solution is always the same: first mix with a little liquid to form a paste, then stir it in. This takes ten seconds and works for all ten varieties.
Four variations for the week
Monday – Glow
1 tsp acai powder instead of blueberry. Provides 44 g of fiber per 100 g and tastes slightly chocolaty.
Wednesday – Kids
1 tsp strawberry powder. Pink color, sweet aroma – experience shows this is the best argument at the breakfast table.
Friday – Tropical
1 tsp mango powder plus some shredded coconut. Almost becomes a lassi.
Sunday – Autumnal
2 tsp apple powder and cinnamon. Tastes like baked apple, without the oven.
Meal Prep
The bowl can be prepared the night before and taken along in a jar. However, add the seeds and granola only shortly before eating – otherwise, they will get soggy.
